This paratha is a super delicious and power packed dish. The main reason for stuffed parathas is jus to simplify work from doing some curry!!
You Need to make 5 Parathas:
Mixed Sprouts - 2 cups
Spring Onion - 1 cup (with the stem – finely chopped)
Ginger -1 tsp (finely chopped)
Red chilli powder - 1 tsp
Garam masala powder - ¼ tsp
Cumin powder - 1 tsp
Cumin Seeds - ½ tsp
Salt as reqd
Oil - 1 tbsp
For the dough:
Wheat Flour - 2 cups
Water as reqd
Salt as reqd
How to Make:
Prepare the dough and set it aside.
In a vessel boil water with half tsp of salt and add the sprouts and cook for 5 minutes.
Drain the water and keep it aside and let it cool. Once it cools grind it to coarse powder without adding water.
In a pan add oil once it becomes hot add cumin seeds once it crackles add ginger and onion parts from springs onion sauté them well and cook it covered for couple of minutes.
Now to the pan add the green part of spring onions sauté them well add the coarse powdered sprouts, salt, chilli powder, garam masala, cumin powder and mix well.
Cover it and cook for 4 minutes until the raw smell goes off.
Roll the batter into thick shape and spoon the mixture and roll into parathas. Cook on both the sides until golden brown in medium flame with some butter applied on sides.
Serve the parathas with vegetable raitha and a dollop of butter on the paratha!!!
