A perfect Saturday brunch goes like this loads of veggies in couscous n simple roasted broccoli soup. They paired up so well; me n my sis had a blast..
What you need for roasted Broccoli Soup:
2 cups - Broccoli, chopped
6 cloves - Garlic
1 no - Onion, diced
2 tbsp - Olive oil
Salt and pepper to taste
2 cups - Vegetable stock
How to make:
Preheat the oven to 220C for 10 min. Place all the vegetables on a baking sheet drizzle with olive oil and some salt n pepper. Roast until they turn tender approx 30 min.
Cool it and blend it till smooth paste add it to the pan with veg stock and bring it to boil and add more seasonings if reqd.
Serve hot!!

¼ cups - Prunes / Dry grapes (chopped)
1 cup - Vegetable stock
½ tsp - Red chilli flakes
¼ tsp - Fresh grounded Pepper
2 tbsp - Fresh coriander (chopped)
1/2 tsp - Cumin seeds
1 tbsp - Olive oil
1 tbsp - Olive oil
1/2 tsp - Salt
How to make:
In a pan add 1 cup water and some salt and bring to boil meanwhile place the couscous in a bowl. Once the water has started boiling pour it over the couscous and gently mix it with a fork. Cover it and rest it for 10 min.
In a pan add olive oil cumin seeds once it is sligthly roasted add onions saute well and add the veggies mix them well add prunes and coriander add the seasonings and add veg stock and cook till they turn tender.
Now add the veggies to the couscous, mix them and refrigerate and serve!!
